When Life Gives You Peaches...

Life  gave us peaches this past week. Literally. Josh was running on campus and stumbled across a peach tree dripping with peaches ripe for the taking. I am not a huge fan of peaches, so my first reaction to his big bag full of them was "what are we going to do with all of them??"


The answer: make peach cobbler. 

Josh is a sucker for cobbler and, while they typically don't have any chocolate in them, I have come to love them over the past few years. They probably rank at a high number 2 or 3 of favorite desserts. Here is how I made this deliciousness last night...

1. Peel the peaches. This is quite difficult because these were so soft and quite small. Afterwards, I quartered them, put them on the stove top along with 1 cup of sugar and 1/2 cup of water. 


2. Stir together and bring to a boil. Let simmer for about 10 minutes. The water turned blood red from all of the juices from the peaches!


3. Combine 1 cup of sugar, 1 1/2 cups of self-rising flour, and 1 1/2 cups of milk in a bowl. Stir together well and try to get out any clumps that might happen from the milk interacting with the flour. 

4. Melt a stick of butter in the bottom of a baking dish then pour the sugar/flour/milk combo on top. Spoon the peaches on top and then, once done, carefully pour the juices on top of that. Do not stir any of it... it will look like this:


I always think it is so interesting how this stuff works. Starts out looking completely disgusting and then after 35 minutes in the over at 350 it comes out looking like this:


Perfection. I sprinkled cinnamon on top of the uncooked cobbler for an extra little flavor.


Seriously, this is so good. Paula Dean at her finest right here. Josh was so excited about this that he actually took all of the pictures and told me "you HAVE to put this on your blog!" Who am I to turn down that kind of enthusiasm? Top off with a few scoops of Bluebell Vanilla ice cream and you are in heaven. I seriously can't wait until blueberry season next year. Yuuuum!
