No pics today... just the assurance from my husband that this is probably "the BEST" fried chicken he's ever had... and that's sayin' something. Gotta thank Paula Dean for the recipe:
Awesome (and a little spicy) Fried Chicken
Chicken
3 eggs
1/3 cup water
2 cups self-rising flour
1 teaspoon pepper
Oil for frying
House seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Beat the eggs with the water. In another bowl, combine the flour and pepper. Season the chicken with the house seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour mixture.
We are so lucky as to have an actual fryer... which has made for some SWEET frying parties!! For this recipe, heat the oil to 350 degrees and fry away in the oil until brown and crisp (8-10 minutes for white meat, 12-14 for dark).
We literally ate just this fried chicken and homemade biscuits last night for dinner. Josh complemented me on finally cooking a southern meal for him and not pasta or casseroles. I am obviously still getting used to cooking for a guy!!
